Steps
• Preheat your oven to 180°C (350°F).
• Line a 12-cup muffin tray with cupcake liners.
• In a bowl, whisk together 1 ½ cups all-purpose flour, ½ teaspoons baking powder, and 1/3 teaspoons salt.
• Set aside.
• In a large bowl, beat ½ cups unsalted butter, softened and 1 cups granulated sugar together until pale and fluffy, about 3–4 minutes
• Beat in 2 large eggs one at a time, then add few drops of vanilla essence until fully combined.
• Alternate folding in the dry ingredient mix and ½ cups whole milk into the butter mixture — start and end with the dry ingredients.
• Mix until just combined; do not over-mix.
• Spoon the batter evenly into the cupcake liners, filling each about 2/3 full.
• Bake for 18–20 minutes, or until a toothpick inserted in the centre comes out clean.
• Remove cupcakes from the oven and let them cool in the tray for 30 minutes, then transfer to a wire rack to cool completely before frosting.
• Beat 1 cups unsalted butter, softened until smooth.
• Gradually add 3 cups icing sugar, sifted and beat on high for 3 minutes.
• Add 3 tablespoons heavy cream and beat until light and fluffy.
• Divide the buttercream into 4 small bowls.
• Add pinch of pink, yellow, green, and purple food colour and mix well.
Frost & decorate:
• Pipe or spread coloured frosting onto each cooled cupcake.
• Top with matching fruit: pink frosting → 6 strawberries
• Yellow frosting → 0.3 cups mango cubes
• Green frosting → 2 kiwi slices
• Purple frosting → 0.3 cups blueberries
• Serve immediately or refrigerate until ready.
